Ingredients
- Lamb shoulder - 300 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 200 grams
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cauliflower - 400 grams, chopped into florets
- Butter - 2 tablespoons
- Plain yogurt - 100 grams
- Fresh parsley - for garnish
Steps
- Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and continue to sauté for another minute until fragrant.
- Increase the heat to high and add the diced lamb. Cook until browned on all sides, about 5-7 minutes.
- Stir in the tomato paste, canned diced tomatoes, cumin, paprika, salt, and black pepper. Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
- While the lamb is cooking, steam the cauliflower florets until tender, about 10-12 minutes.
- In a blender or food processor, combine the steamed cauliflower and butter, and blend until smooth. Season with salt to taste.
- Once the lamb is cooked, remove from heat and let it rest for a few minutes.
- To serve, place a generous scoop of the cauliflower puree on each plate, top with the lamb mixture, and drizzle with plain yogurt.
- Garnish with fresh parsley and serve warm.
