Ingredients

  • Lamb shoulder - 300 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 200 grams
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cauliflower - 400 grams, chopped into florets
  • Butter - 2 tablespoons
  • Plain yogurt - 100 grams
  • Fresh parsley - for garnish

Steps

  1. Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and continue to sauté for another minute until fragrant.
  3. Increase the heat to high and add the diced lamb. Cook until browned on all sides, about 5-7 minutes.
  4. Stir in the tomato paste, canned diced tomatoes, cumin, paprika, salt, and black pepper. Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
  5. While the lamb is cooking, steam the cauliflower florets until tender, about 10-12 minutes.
  6. In a blender or food processor, combine the steamed cauliflower and butter, and blend until smooth. Season with salt to taste.
  7. Once the lamb is cooked, remove from heat and let it rest for a few minutes.
  8. To serve, place a generous scoop of the cauliflower puree on each plate, top with the lamb mixture, and drizzle with plain yogurt.
  9. Garnish with fresh parsley and serve warm.
