Ingredients

  • Lamb shoulder - 300 grams, diced
  • Vine leaves - 12 pieces, rinsed and drained
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 100 ml

Steps

  1. In a mixing bowl, combine the diced lamb, chopped onion, minced garlic, parsley, mint, paprika, cumin, salt, and black pepper. Mix well to ensure the lamb is evenly coated with the spices.
  2. Add the olive oil and lemon juice to the mixture, and let it marinate for at least 15 minutes.
  3. While the lamb is marinating, prepare the vine leaves by laying them flat on a clean surface.
  4. Take a spoonful of the lamb mixture and place it at the base of each vine leaf. Roll the leaf tightly around the filling, folding in the sides to secure it. Repeat until all the filling is used.
  5. Preheat a grill or BBQ to medium-high heat. Place the wrapped vine leaves on the grill and cook for about 20-25 minutes, turning occasionally until the lamb is cooked through and the leaves are slightly charred.
  6. Serve hot, drizzled with additional lemon juice if desired.
