- Feta cheese - 50 grams, crumbled (optional)
- Black olives - 50 grams, pitted and sliced
- Balsamic vinegar - 1 tablespoon
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create a marinade.
- Cut the lamb shoulder into bite-sized cubes and add to the marinade, mixing well. Cover and let it marinate for at least 30 minutes at room temperature.
- While the lamb is marinating, prepare the salad by combining cherry tomatoes, cucumber, red onion, parsley, black olives, and feta cheese in a large bowl.
- Drizzle the balsamic vinegar over the salad and toss gently to combine. Set aside.
- Preheat a grill or barbecue to medium-high heat. Thread the marinated lamb onto skewers, leaving some space between each piece.
- Grill the lamb skewers for about 10-15 minutes, turning occasionally until they are cooked through and slightly charred.
