  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1/2 small, thinly sliced
  • Parsley - 1/4 cup, chopped
  • Feta cheese - 50 grams, crumbled (optional)
  • Black olives - 50 grams, pitted and sliced
  • Balsamic vinegar - 1 tablespoon

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create a marinade.
  2. Cut the lamb shoulder into bite-sized cubes and add to the marinade, mixing well. Cover and let it marinate for at least 30 minutes at room temperature.
  3. While the lamb is marinating, prepare the salad by combining cherry tomatoes, cucumber, red onion, parsley, black olives, and feta cheese in a large bowl.
  4. Drizzle the balsamic vinegar over the salad and toss gently to combine. Set aside.
  5. Preheat a grill or barbecue to medium-high heat. Thread the marinated lamb onto skewers, leaving some space between each piece.
  6. Grill the lamb skewers for about 10-15 minutes, turning occasionally until they are cooked through and slightly charred.
