Ingredients

  • Lamb shoulder - 250 grams, cubed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Turmeric - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Rice (preferably basmati) - 150 grams
  • Water - 300 ml
  • Fresh parsley - a handful, chopped (for garnish)

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and continue to sauté for another minute until fragrant.
  3. Incorporate the cubed lamb shoulder into the skillet and brown on all sides, approximately 10 minutes.
  4. Stir in the diced tomato and green bell pepper, cooking for another 5 minutes until the vegetables soften.
  5. Season the mixture with turmeric, cumin, salt, and black pepper. Mix well to combine all the flavors.
  6. Add the rice to the skillet, stirring until the rice is coated with the meat and spices.
  7. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  8. Remove from heat and let it sit, covered, for an additional 10 minutes to steam.
  9. Fluff the pilav with a fork and garnish with chopped fresh parsley before serving.
