- Lamb shoulder - 250 grams, cubed
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Turmeric - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Rice (preferably basmati) - 150 grams
- Water - 300 ml
- Fresh parsley - a handful, chopped (for garnish)
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and continue to sauté for another minute until fragrant.
- Incorporate the cubed lamb shoulder into the skillet and brown on all sides, approximately 10 minutes.
- Stir in the diced tomato and green bell pepper, cooking for another 5 minutes until the vegetables soften.
- Season the mixture with turmeric, cumin, salt, and black pepper. Mix well to combine all the flavors.
- Add the rice to the skillet, stirring until the rice is coated with the meat and spices.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 10 minutes to steam.
- Fluff the pilav with a fork and garnish with chopped fresh parsley before serving.
