Ingredients
- Lamb shoulder - 300 grams, cut into cubes
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Greek yogurt - 100 grams, for serving
- Fresh parsley - 2 tablespoons, chopped, for garnish
- Almond flour - 50 grams, for keto flatbread
- Egg - 1 large, for keto flatbread
- Baking powder - 1/2 teaspoon, for keto flatbread
- Water - 2 tablespoons, for keto flatbread
Steps
- In a bowl, combine lamb cubes, olive oil, minced garlic, paprika, cumin, salt, and black pepper. Mix well and marinate for at least 30 minutes.
- Preheat the grill or a frying pan over medium-high heat.
- While the meat is marinating, prepare the keto flatbread. In a bowl, mix almond flour, baking powder, and salt. Add the egg and water, stirring until a dough forms.
- Roll the dough out into two flatbread shapes, about 1cm thick.
- Cook the flatbreads on the preheated grill or frying pan for about 2-3 minutes on each side until golden brown. Remove and set aside.
- Place the marinated lamb cubes on the grill or in the pan and cook for about 10-12 minutes, turning occasionally until cooked to your desired doneness.
- To serve, place the cooked lamb on the keto flatbreads, spoon a dollop of Greek yogurt on top, and garnish with chopped parsley.
