- Almond flour - 200 grams
- Ground lamb - 300 grams
- Egg - 1 large
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (392°F).
- In a bowl, combine almond flour and egg to form a dough. If the dough is too crumbly, add a teaspoon of olive oil.
- On a clean surface, roll out the almond flour dough to form a flatbread shape, approximately 1/2 cm thick.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.
- Add ground lamb to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in tomato paste, paprika, cumin, salt, and black pepper, cooking for another 5 minutes until the mixture is well combined and fragrant.
- Remove from heat and mix in chopped parsley.
- Transfer the rolled-out flatbread to a baking sheet lined with parchment paper.
- Spread the lamb mixture evenly over the flatbread.
- Bake in the preheated oven for 20-25 minutes until the edges are golden and the lamb is cooked through.
- Remove from the oven, let cool for a few minutes, then slice and serve.
