  • Olive oil - 3 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Lemon - 1, juiced

Steps

  1. In a large bowl, combine the lamb cubes with minced garlic, olive oil, ground cumin, paprika, salt, black pepper, and lemon juice. Mix well and let it marinate for at least 30 minutes.
  2. While the lamb is marinating, prepare the vegetables. Toss the eggplant, red onion, and red bell pepper with a little olive oil, salt, and pepper.
