Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 3 tablespoons
  • Greek yogurt - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a mixing bowl, combine olive oil, Greek yogurt, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to create the marinade.
  2. Add the cubed lamb shoulder to the marinade, mixing well to ensure all pieces are coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Thread the marinated lamb pieces onto the skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired level of doneness.
  6. Remove from the grill and let rest for a few minutes. Garnish with chopped fresh parsley before serving.
