Ingredients

  • lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • olive oil - 2 tablespoons
  • red onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • lemon juice - 1 tablespoon
  • skewers - 4 (soaked in water if wooden)

Steps

  1. In a bowl, combine olive oil, red onion, garlic, ground cumin, ground coriander, paprika, salt, black pepper, parsley, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for enhanced flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. Remove from the grill and let rest for a few minutes before serving.
