Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Lemon - 1, juiced
  • Red bell pepper - 1, cut into 2.5 cm pieces
  • Zucchini - 1 small, sliced into rounds
  • Cherry tomatoes - 100 grams

Steps

  1. In a large bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, paprika, cumin, salt, black pepper, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated, and let them marinate for at least 15 minutes at room temperature.
  3. While the lamb is marinating, soak wooden skewers in water for 10 minutes to prevent burning on the grill.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread the marinated lamb cubes onto the soaked skewers, alternating with pieces of red bell pepper, zucchini rounds, and cherry tomatoes.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the lamb is browned and cooked to your desired level of doneness.
  7. Remove the skewers from the grill, let them rest for a few minutes, and serve immediately with fresh salad or cauliflower rice.
