Ingredients
- Lamb shoulder - 300 grams, cut into cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable stock - 500 ml
- Chickpeas - 100 grams, cooked
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon - 1, juiced
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced carrot and cook for another 5 minutes, stirring occasionally.
- Stir in the lamb cubes and cook until browned on all sides, about 10 minutes.
- Add the diced tomato, cumin, paprika, salt, and black pepper. Cook for another 5 minutes until the tomato softens.
- Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat to low and let it simmer for 30 minutes, covered.
- Add the cooked chickpeas and simmer for an additional 10 minutes.
- Just before serving, stir in the lemon juice and garnish with fresh parsley.
