Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable stock - 500 ml
  • Chickpeas - 100 grams, cooked
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced carrot and cook for another 5 minutes, stirring occasionally.
  3. Stir in the lamb cubes and cook until browned on all sides, about 10 minutes.
  4. Add the diced tomato, cumin, paprika, salt, and black pepper. Cook for another 5 minutes until the tomato softens.
  5. Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat to low and let it simmer for 30 minutes, covered.
  6. Add the cooked chickpeas and simmer for an additional 10 minutes.
  7. Just before serving, stir in the lemon juice and garnish with fresh parsley.
