Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh rosemary - 1 teaspoon, chopped
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a mixing bowl, combine olive oil, minced garlic, ground cumin, paprika, salt, black pepper, chopped rosemary, and lemon juice to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or up to 4 hours for more flavor).
  3. Preheat your grill or BBQ to medium-high heat.
  4. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
