Ingredients

  • Ground lamb - 250 grams
  • Cauliflower - 300 grams (riced)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Egg - 1 large
  • Almond flour - 100 grams
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Bone broth - 500 ml
  • Tomato paste - 1 tablespoon

Steps

  1. In a mixing bowl, combine the ground lamb, riced cauliflower, chopped onion, minced garlic, egg, paprika, cumin, salt, black pepper, and parsley. Mix well until all ingredients are thoroughly combined.
  2. Take a small amount of the mixture and shape it into a dumpling (about 2.5 cm in diameter). Repeat until all the mixture is shaped into dumplings.
  3. In a large pot, heat the olive oil over medium heat. Add the dumplings in batches, browning them on all sides for about 5 minutes.
  4. Once the dumplings are browned, add the bone broth and tomato paste to the pot. Bring to a simmer and cook for 20-25 minutes until the dumplings are tender and cooked through.
  5. Serve the Kuzu Kuzu Manti hot, garnished with additional chopped parsley if desired.
