Ingredients

  • Lamb shoulder - 500 grams, cut into 4 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 2 sprigs, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Red onion - 1 medium, quartered
  • Bell pepper - 1 medium, cut into chunks

Steps

  1. In a large bowl, combine lamb cubes with olive oil, minced garlic, rosemary, thyme, paprika, cumin, salt, black pepper, and lemon juice. Mix well to marinate the lamb for at least 1 hour, preferably overnight in the refrigerator.
  2. Preheat your BBQ grill or oven to 150°C (300°F).
  3. Once the lamb is marinated, thread the lamb cubes, red onion, and bell pepper onto skewers, alternating between the ingredients.
  4. Place the skewers on the grill or in the oven and cook for about 2 hours, turning occasionally until the lamb is tender and cooked through.
  5. Remove the kebabs from the grill and let them rest for 5-10 minutes before serving.
