Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Fresh rosemary - 2 sprigs
  • Fresh thyme - 2 sprigs
  • Lemon juice - 2 tablespoons
  • Water - 250 milliliters

Steps

  1. In a large bowl, combine olive oil, minced garlic, chopped onion, paprika, cumin, black pepper, salt, lemon juice, and mix well to create a marinade.
  2. Cut the lamb shoulder into large chunks and add it to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your oven to 150°C (300°F). In a large Dutch oven or oven-safe pot, place the marinated lamb along with all the marinade, fresh rosemary, and thyme.
  4. Pour in the water, cover the pot with a lid, and place it in the preheated oven. Cook for 3 hours or until the lamb is tender and pulls apart easily with a fork.
  5. Once cooked, remove the pot from the oven and let it rest for 10 minutes before serving. Shred the lamb and serve with your choice of Paleo-friendly sides.
