- Lamb shoulder - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Yogurt - 100 grams
- Lemon juice - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh rosemary - 2 sprigs
- Fresh thyme - 2 sprigs
Steps
- In a bowl, mix olive oil, minced garlic, yogurt, lemon juice, cumin, paprika, salt, and black pepper to create a marinade.
- Cut the lamb shoulder into large chunks and add them to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat your oven to 160°C (320°F).
- Place the marinated lamb in a baking dish and add the fresh rosemary and thyme on top.
- Cover the dish tightly with aluminum foil and cook in the preheated oven for 2 hours.
- Remove the foil and increase the oven temperature to 220°C (428°F). Cook for an additional 30 minutes or until the lamb is browned and crispy on the outside.
- Remove from the oven and let the lamb rest for 10 minutes before serving.
