Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Yogurt - 100 grams
  • Lemon juice - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary - 2 sprigs
  • Fresh thyme - 2 sprigs

Steps

  1. In a bowl, mix olive oil, minced garlic, yogurt, lemon juice, cumin, paprika, salt, and black pepper to create a marinade.
  2. Cut the lamb shoulder into large chunks and add them to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your oven to 160°C (320°F).
  4. Place the marinated lamb in a baking dish and add the fresh rosemary and thyme on top.
  5. Cover the dish tightly with aluminum foil and cook in the preheated oven for 2 hours.
  6. Remove the foil and increase the oven temperature to 220°C (428°F). Cook for an additional 30 minutes or until the lamb is browned and crispy on the outside.
  7. Remove from the oven and let the lamb rest for 10 minutes before serving.
