Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Eggplant - 1 small, cubed
  • Tomatoes - 2 medium, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine the minced garlic, paprika, cumin, salt, black pepper, and olive oil to create a marinade.
  2. Cut the lamb shoulder into bite-sized cubes and add them to the marinade, mixing well. Cover and refrigerate for at least 30 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. While the lamb is marinating, prepare the vegetables by tossing the zucchini, bell pepper, and eggplant in olive oil, salt, and pepper.
  5. Grill the marinated lamb cubes for about 10-12 minutes, turning occasionally until they are browned and cooked to your desired doneness.
  6. At the same time, grill the vegetables for about 8-10 minutes until tender and slightly charred.
  7. In a saucepan, cook the diced tomatoes over medium heat for about 5 minutes, allowing them to soften and release their juices.
  8. Serve the grilled lamb over a bed of the grilled vegetables, topped with the fresh tomato sauce and garnished with chopped parsley and a squeeze of lemon juice.
