- Lamb shoulder - 400 grams

- Paprika - 1 teaspoon
- Cumin - 1 teaspoon

- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Eggplant - 1 small, cubed
- Tomatoes - 2 medium, diced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a bowl, combine the minced garlic, paprika, cumin, salt, black pepper, and olive oil to create a marinade.
- Cut the lamb shoulder into bite-sized cubes and add them to the marinade, mixing well. Cover and refrigerate for at least 30 minutes.
- Preheat a grill or grill pan over medium-high heat.
- While the lamb is marinating, prepare the vegetables by tossing the zucchini, bell pepper, and eggplant in olive oil, salt, and pepper.
- Grill the marinated lamb cubes for about 10-12 minutes, turning occasionally until they are browned and cooked to your desired doneness.
- At the same time, grill the vegetables for about 8-10 minutes until tender and slightly charred.
- In a saucepan, cook the diced tomatoes over medium heat for about 5 minutes, allowing them to soften and release their juices.
- Serve the grilled lamb over a bed of the grilled vegetables, topped with the fresh tomato sauce and garnished with chopped parsley and a squeeze of lemon juice.
