Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Yogurt - 3 tablespoons (optional for serving)
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, paprika, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
  3. Preheat your grill or BBQ to medium-high heat.
  4. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. Remove from the grill and let rest for a few minutes before serving. Optionally, serve with yogurt alongside.
