Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Paprika - 1 tablespoon
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a large bowl, combine olive oil, minced garlic, paprika, cumin, oregano, black pepper, salt, and lemon juice to create a marinade.
  2. Cut the lamb shoulder into large chunks and add it to the marinade, ensuring each piece is well-coated. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, preferably overnight.
  3. Preheat your BBQ grill or oven to a medium-high temperature.
  4. Skewer the marinated lamb chunks onto metal or soaked wooden skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill or in the oven and cook for about 2 hours, turning occasionally, until the lamb is tender and slightly charred.
  6. Once cooked, remove the skewers from the grill and let them rest for 10 minutes.
  7. Garnish with chopped fresh parsley before serving.
