Ingredients
- Lamb shoulder - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 medium, finely chopped
- Lemon juice - 2 tablespoons
- Paprika - 1 tablespoon
- Cumin - 1 teaspoon
- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 250 milliliters
Steps
- In a large bowl, combine olive oil, minced garlic, chopped onion, lemon juice, paprika, cumin, black pepper, and salt to create a marinade.
- Cut the lamb shoulder into large chunks and add it to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat the oven to 150°C (300°F). Place the marinated lamb in a roasting pan and pour in the water.
- Cover the pan tightly with aluminum foil and roast in the preheated oven for about 2 hours, or until the lamb is tender and easily pulls apart.
- Remove the foil and increase the oven temperature to 220°C (425°F). Roast for an additional 30 minutes to achieve a crispy exterior.
- Once done, take the lamb out of the oven and let it rest for 10 minutes before serving.
- Garnish with chopped fresh parsley and serve with your favorite Paleo-friendly sides.
