Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, finely chopped
  • Lemon juice - 2 tablespoons
  • Paprika - 1 tablespoon
  • Cumin - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 250 milliliters

Steps

  1. In a large bowl, combine olive oil, minced garlic, chopped onion, lemon juice, paprika, cumin, black pepper, and salt to create a marinade.
  2. Cut the lamb shoulder into large chunks and add it to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the oven to 150°C (300°F). Place the marinated lamb in a roasting pan and pour in the water.
  4. Cover the pan tightly with aluminum foil and roast in the preheated oven for about 2 hours, or until the lamb is tender and easily pulls apart.
  5. Remove the foil and increase the oven temperature to 220°C (425°F). Roast for an additional 30 minutes to achieve a crispy exterior.
  6. Once done, take the lamb out of the oven and let it rest for 10 minutes before serving.
  7. Garnish with chopped fresh parsley and serve with your favorite Paleo-friendly sides.
