Ingredients
- Lamb shoulder - 600 grams
- Olive oil - 2 tablespoons
- Greek yogurt - 100 grams
- Garlic - 4 cloves, minced
- Lemon juice - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 2 sprigs, chopped
- Water - 150 milliliters
Steps
- Cut the lamb shoulder into large chunks and place them in a mixing bowl.
- In a separate bowl, combine olive oil, Greek yogurt, minced garlic, lemon juice, cumin, paprika, black pepper, salt, rosemary, and thyme to form a marinade.
- Pour the marinade over the lamb chunks and ensure they are well-coated. Cover and marinate in the refrigerator for at least 2 hours or overnight for best results.
- Preheat your BBQ grill or oven to a low temperature (about 120°C or 250°F).
- Place the marinated lamb in a roasting pan and add 150 ml of water to keep it moist during cooking.
- Cover the roasting pan with aluminum foil to trap the steam and cook the lamb for approximately 3 hours, or until the meat is tender and easily pulls apart.
- Remove the foil and cook for an additional 20-30 minutes to achieve a crispy exterior.
- Once cooked, let the lamb rest for 10 minutes before serving. Serve with a side of grilled vegetables or a fresh salad.
