  • Fresh thyme - 1 tablespoon, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Red onion - 1 medium, cut into wedges
  • Bell pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced into thick rounds
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. In a large bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, cumin, salt, black pepper, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.
  3. Preheat your grill or grill pan over medium-high heat.
  4. While the grill is heating, prepare the vegetables by skewering the red onion, bell pepper, and zucchini, alternating them with the marinated lamb pieces.
  5. Once the grill is hot, place the skewers on it and cook for about 10-12 minutes, turning occasionally until the lamb is browned and cooked through to your desired doneness.
