- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Red onion - 1 medium, cut into wedges
- Bell pepper - 1 medium, cut into chunks
- Zucchini - 1 medium, sliced into thick rounds
- Skewers - 4 (soaked in water for 30 minutes if wooden)
Steps
- In a large bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, cumin, salt, black pepper, and lemon juice to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.
- Preheat your grill or grill pan over medium-high heat.
- While the grill is heating, prepare the vegetables by skewering the red onion, bell pepper, and zucchini, alternating them with the marinated lamb pieces.
- Once the grill is hot, place the skewers on it and cook for about 10-12 minutes, turning occasionally until the lamb is browned and cooked through to your desired doneness.
