Ingredients

  • Lamb leg, boneless - 400 grams
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1, diced
  • Eggplant - 1 small, cubed
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Tomato puree - 100 grams
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. In a bowl, marinate the lamb with olive oil, minced garlic, salt, black pepper, and dried oregano for at least 30 minutes.
  3. While the lamb is marinating, prepare the vegetables by tossing the zucchini, red bell pepper, and eggplant with olive oil, salt, and pepper.
  4. Grill the marinated lamb for about 15-20 minutes, turning occasionally, until it reaches your desired doneness (medium-rare is about 57°C).
  5. At the same time, place the prepared vegetables on the grill and cook for about 10-15 minutes until they are tender and slightly charred.
  6. In a small saucepan, heat the tomato puree over medium heat until warmed through. Adjust seasoning if necessary.
  7. Once the lamb is cooked, let it rest for 5 minutes, then slice it thinly.
  8. To serve, place a bed of grilled vegetables on each plate, top with the sliced lamb, and drizzle with the warm tomato sauce.
  9. Garnish with fresh parsley before serving.
