- Lamb leg, boneless - 400 grams
- Zucchini - 1 medium, sliced
- Red bell pepper - 1, diced
- Eggplant - 1 small, cubed
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Tomato puree - 100 grams
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Fresh parsley - for garnish
Steps
- Preheat your grill or BBQ to medium-high heat.
- In a bowl, marinate the lamb with olive oil, minced garlic, salt, black pepper, and dried oregano for at least 30 minutes.
- While the lamb is marinating, prepare the vegetables by tossing the zucchini, red bell pepper, and eggplant with olive oil, salt, and pepper.
- Grill the marinated lamb for about 15-20 minutes, turning occasionally, until it reaches your desired doneness (medium-rare is about 57°C).
- At the same time, place the prepared vegetables on the grill and cook for about 10-15 minutes until they are tender and slightly charred.
- In a small saucepan, heat the tomato puree over medium heat until warmed through. Adjust seasoning if necessary.
- Once the lamb is cooked, let it rest for 5 minutes, then slice it thinly.
- To serve, place a bed of grilled vegetables on each plate, top with the sliced lamb, and drizzle with the warm tomato sauce.
- Garnish with fresh parsley before serving.
