- Lamb shoulder - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh rosemary - 2 sprigs, chopped
- Lemon juice - 1 tablespoon
- Water - 200 milliliters
Steps
- In a large bowl, combine the lamb shoulder with olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, chopped rosemary, and lemon juice. Mix well to coat the lamb evenly with the marinade.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or overnight for better flavor.
- Preheat your oven to 150°C (300°F). Place the marinated lamb in a deep roasting pan and add the water to the bottom of the pan.
- Cover the pan tightly with aluminum foil and roast in the preheated oven for about 2 hours, or until the lamb is fork-tender.
- Remove the foil and increase the oven temperature to 200°C (400°F). Roast for an additional 20-30 minutes to get a nice crispy exterior.
