- Paprika - 1 tablespoon
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large bowl, combine olive oil, minced garlic, paprika, cumin, oregano, salt, black pepper, and lemon juice to create a marinade.
- Cut the lamb shoulder into large chunks and add it to the marinade, ensuring all pieces are well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.
- Preheat your oven to 150°C (300°F).
- Place the marinated lamb in a deep baking dish and cover it tightly with aluminum foil.
- Bake in the preheated oven for 3 hours or until the lamb is tender and easily pulls apart with a fork.
- Remove the foil and increase the oven temperature to 220°C (430°F). Bake for an additional 30 minutes to achieve a crispy exterior.
- Once done, remove from the oven and let it rest for 10 minutes before serving.
