Ingredients

  • Lamb shoulder - 400 grams (cut into 2.5 cm cubes)
  • Greek yogurt - 100 grams
  • Red onion - 1 medium (finely chopped)
  • Garlic - 3 cloves (minced)
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a large bowl, combine the Greek yogurt, red onion, garlic, olive oil, lemon juice, paprika, cumin, salt, and black pepper to create the marinade.
  2. Add the lamb cubes to the marinade, mixing well to ensure they are fully coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Thread the marinated lamb cubes onto the skewers, packing them closely but not overcrowding.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness (medium-rare is recommended).
  6. Remove from the grill and let rest for a few minutes before serving.
