- Lamb shoulder - 400 grams, cut into 2.5 cm cubes

- Greek yogurt - 100 grams
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- In a mixing bowl, combine olive oil, Greek yogurt, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice to create the marinade.
- Add the lamb cubes to the marinade and mix well to ensure all pieces are coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
- Preheat your grill or barbecue to medium-high heat.
- Thread the marinated lamb onto skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
- Remove from the grill and let rest for 5 minutes before serving.
- Garnish with chopped fresh parsley and serve with a side of rice or flatbread.
