Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Greek yogurt - 100 grams
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a mixing bowl, combine olive oil, Greek yogurt, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice to create the marinade.
  2. Add the lamb cubes to the marinade and mix well to ensure all pieces are coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Thread the marinated lamb onto skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. Remove from the grill and let rest for 5 minutes before serving.
  7. Garnish with chopped fresh parsley and serve with a side of rice or flatbread.
