Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Plain yogurt - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a mixing bowl, combine the yogurt, olive oil, minced garlic, lemon juice, ground cumin, paprika, salt, and black pepper to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your grill or BBQ to medium-high heat.
  4. Thread the marinated lamb onto the soaked wooden skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the lamb is browned and cooked to your desired level of doneness.
  6. Once cooked, remove the skewers from the grill and let them rest for a few minutes.
  7. Garnish with fresh chopped parsley and serve with a side of salad or pita bread.
