Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Yogurt - 100 grams
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. Cut the lamb shoulder into 2.5 cm cubes and place them in a bowl.
  2. In a separate bowl, combine olive oil, yogurt, minced garlic, lemon juice, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
  3. Pour the marinade over the lamb cubes, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  4. Preheat your grill or BBQ to medium-high heat.
  5. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is nicely charred and cooked to your desired doneness.
  7. Remove the kebabs from the grill and let them rest for a few minutes.
  8. Serve the kebabs garnished with fresh parsley and accompanied by pita bread or rice if desired.
