- Lamb shoulder - 400 grams

- Yogurt - 100 grams
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Skewers - 4 (soaked in water if wooden)
Steps
- Cut the lamb shoulder into 2.5 cm cubes and place them in a bowl.
- In a separate bowl, combine olive oil, yogurt, minced garlic, lemon juice, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
- Pour the marinade over the lamb cubes, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat your grill or BBQ to medium-high heat.
- Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is nicely charred and cooked to your desired doneness.
- Remove the kebabs from the grill and let them rest for a few minutes.
- Serve the kebabs garnished with fresh parsley and accompanied by pita bread or rice if desired.
