Ingredients

  • Lamb head (kuzu kafası) - 1 kg
  • Olive oil - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Lemon juice - 2 tablespoons
  • Paprika - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped

Steps

  1. Clean the lamb head thoroughly under cold running water, removing any hair or impurities.
  2. In a large bowl, combine olive oil, minced garlic, lemon juice, paprika, cumin, salt, and black pepper to create a marinade.
  3. Rub the marinade all over the lamb head, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the lamb head from the marinade and let it come to room temperature for about 30 minutes.
  6. Place the lamb head on the grill and cook for about 1.5 to 2 hours, turning occasionally to ensure even cooking and prevent burning.
  7. The lamb head is done when the meat is tender and easily pulls away from the bone.
  8. Once cooked, remove from the grill and let it rest for 10 minutes before serving.
  9. Garnish with chopped fresh parsley and mint before serving.
