Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Greek yogurt - 100 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a mixing bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade and mix well to ensure all pieces are coated. Cover and refrigerate for at least 30 minutes, or up to overnight for better flavor.
  3. Preheat your grill or BBQ to medium-high heat.
  4. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the lamb is cooked to your desired doneness and has a nice char.
  6. Remove the skewers from the grill and let them rest for a few minutes. Sprinkle with chopped fresh parsley before serving.
