Ingredients
- lamb shoulder - 500 grams
- olive oil - 2 tablespoons
- garlic - 3 cloves, minced
- fresh rosemary - 2 sprigs, chopped
- fresh thyme - 1 teaspoon, chopped
- paprika - 1 teaspoon
- cumin - 1 teaspoon
- black pepper - 1/2 teaspoon
- sea salt - 1 teaspoon
- lemon juice - 2 tablespoons
- bell pepper - 1 medium, cut into chunks
- zucchini - 1 medium, sliced
- red onion - 1 medium, cut into wedges
Steps
- Cut the lamb shoulder into 2.5 cm cubes and place them in a large mixing bowl.
- In a separate bowl, combine olive oil, minced garlic, chopped rosemary, thyme, paprika, cumin, black pepper, sea salt, and lemon juice to create the marinade.
- Pour the marinade over the lamb cubes, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- Soak wooden skewers in water for 20 minutes to prevent burning on the grill.
- Preheat your grill to medium-high heat.
- Thread the marinated lamb, bell pepper chunks, zucchini slices, and red onion wedges onto the soaked skewers, alternating between the meat and vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked through and has a nice char.
- Remove from the grill and let rest for a few minutes before serving.
