Ingredients

  • lamb shoulder - 500 grams
  • olive oil - 2 tablespoons
  • garlic - 3 cloves, minced
  • fresh rosemary - 2 sprigs, chopped
  • fresh thyme - 1 teaspoon, chopped
  • paprika - 1 teaspoon
  • cumin - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • sea salt - 1 teaspoon
  • lemon juice - 2 tablespoons
  • bell pepper - 1 medium, cut into chunks
  • zucchini - 1 medium, sliced
  • red onion - 1 medium, cut into wedges

Steps

  1. Cut the lamb shoulder into 2.5 cm cubes and place them in a large mixing bowl.
  2. In a separate bowl, combine olive oil, minced garlic, chopped rosemary, thyme, paprika, cumin, black pepper, sea salt, and lemon juice to create the marinade.
  3. Pour the marinade over the lamb cubes, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. Soak wooden skewers in water for 20 minutes to prevent burning on the grill.
  5. Preheat your grill to medium-high heat.
  6. Thread the marinated lamb, bell pepper chunks, zucchini slices, and red onion wedges onto the soaked skewers, alternating between the meat and vegetables.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked through and has a nice char.
  8. Remove from the grill and let rest for a few minutes before serving.
