Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red bell pepper - 1, cut into chunks
  • Red onion - 1, cut into chunks
  • Zucchini - 1, sliced into rounds

Steps

  1. In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, salt, and black pepper.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated lamb, red bell pepper, red onion, and zucchini onto skewers, alternating between the ingredients.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. Remove from the grill and let rest for a few minutes before serving.
