- Lamb shoulder - 400 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 1 tablespoon, chopped
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red bell pepper - 1, cut into chunks
- Red onion - 1, cut into chunks
- Zucchini - 1, sliced into rounds
Steps
- In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, salt, and black pepper.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.
- Preheat your grill to medium-high heat.
- Thread the marinated lamb, red bell pepper, red onion, and zucchini onto skewers, alternating between the ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
- Remove from the grill and let rest for a few minutes before serving.
