- Lamb head - 1 whole, cleaned and halved
- Olive oil - 4 tablespoons
- Garlic - 4 cloves, minced
- Fresh rosemary - 2 teaspoons, chopped
- Fresh thyme - 2 teaspoons, chopped
- Paprika - 1 tablespoon
- Salt - 2 teaspoons
- Black pepper - 1 teaspoon
- Lemon juice - 2 tablespoons
- Water - 500 ml
Steps
- In a large bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, paprika, salt, black pepper, and lemon juice to create a marinade.
- Coat the cleaned and halved lamb head thoroughly with the marinade and let it marinate in the refrigerator for at least 2 hours, or preferably overnight.
- Preheat your grill to medium-high heat.
- Remove the lamb head from the marinade and let any excess marinade drip off.
- Place the lamb head on the grill, cut side down, and grill for about 40 minutes, turning occasionally until the meat is tender and has a nice char.
- Meanwhile, in a pot, bring the water to a boil and lightly season with salt. Use this to baste the lamb head during grilling to keep it moist.
- Once the lamb head is grilled to your desired doneness, remove it from the grill and let it rest for 10 minutes before serving.
- Serve the grilled lamb head with fresh herbs and lemon wedges on the side.
