Ingredients

  • Lamb shoulder - 400 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 15 grams, finely chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Cauliflower - 200 grams, for side
  • Lemon - 1, for serving

Steps

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine minced garlic, parsley, mint, paprika, cumin, salt, black pepper, and olive oil.
  3. Cut the lamb shoulder into strips, approximately 2 cm thick, and add to the bowl. Coat the lamb with the marinade and let it marinate for 20 minutes.
  4. While the lamb is marinating, break the cauliflower into florets and steam them for about 10 minutes until tender.
  5. Skewer the marinated lamb strips onto skewers, leaving some space between each piece for even cooking.
  6. Place the skewers on the grill and cook for 3-4 minutes on each side, or until the lamb is cooked to your liking.
  7. Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
  8. Serve the lamb skewers with steamed cauliflower and lemon wedges.
