Ingredients
- Lamb shoulder - 400 grams
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, finely chopped
- Fresh mint - 15 grams, finely chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Cauliflower - 200 grams, for side
- Lemon - 1, for serving
Steps
- Preheat the grill to medium-high heat.
- In a large bowl, combine minced garlic, parsley, mint, paprika, cumin, salt, black pepper, and olive oil.
- Cut the lamb shoulder into strips, approximately 2 cm thick, and add to the bowl. Coat the lamb with the marinade and let it marinate for 20 minutes.
- While the lamb is marinating, break the cauliflower into florets and steam them for about 10 minutes until tender.
- Skewer the marinated lamb strips onto skewers, leaving some space between each piece for even cooking.
- Place the skewers on the grill and cook for 3-4 minutes on each side, or until the lamb is cooked to your liking.
- Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
- Serve the lamb skewers with steamed cauliflower and lemon wedges.
