- Lamb shoulder - 400 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Red onion - 1 small, cut into wedges
- Bell pepper - 1 medium, cut into chunks
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, paprika, cumin, salt, black pepper, and lemon juice to create the marinade.
- Add the lamb cubes to the marinade, making sure they are well-coated. Cover and refrigerate for at least 30 minutes (up to 4 hours for better flavor).
- Preheat the grill to medium-high heat.
- Thread the marinated lamb cubes onto skewers, alternating with red onion wedges and bell pepper chunks.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
- Remove from the grill and let rest for a few minutes before serving.
