Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Red onion - 1 small, cut into wedges
  • Bell pepper - 1 medium, cut into chunks
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, paprika, cumin, salt, black pepper, and lemon juice to create the marinade.
  2. Add the lamb cubes to the marinade, making sure they are well-coated. Cover and refrigerate for at least 30 minutes (up to 4 hours for better flavor).
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb cubes onto skewers, alternating with red onion wedges and bell pepper chunks.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. Remove from the grill and let rest for a few minutes before serving.
