Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Greek yogurt - 150 grams
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cut the lamb shoulder into 2.5 cm cubes and set aside.
  2. In a large bowl, mix olive oil, minced garlic, Greek yogurt, lemon juice, ground cumin, paprika, salt, and black pepper to create a marinade.
  3. Add the lamb cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight for more flavor.
  4. Preheat your grill or BBQ to medium-high heat.
  5. Thread the marinated lamb pieces onto skewers, leaving a little space between each piece.
  6. Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally until the lamb is browned and cooked to your desired doneness.
  7. Remove from the grill and let rest for 5 minutes before serving.
  8. Garnish with chopped fresh parsley and serve with a side of grilled vegetables or pita bread.
