Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Yogurt - 2 tablespoons (optional for serving)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 2 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Cut the lamb shoulder into 2.5 cm cubes and place them in a bowl.
  2. In another bowl, mix olive oil, minced garlic, lemon juice, cumin, paprika, oregano, salt, and black pepper to create the marinade.
  3. Pour the marinade over the lamb cubes and mix well to ensure the meat is fully coated. Cover and refrigerate for at least 1 hour, or preferably overnight.
  4. Preheat your grill or BBQ to medium-high heat.
  5. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece.
  6. Grill the kebabs for 10-12 minutes, turning occasionally, until the lamb is cooked through and has nice grill marks.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.
  8. Serve with a dollop of yogurt on the side, if desired.
