- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Bell pepper - 1 medium, cut into 2.5 cm cubes (for skewering)
- Red onion - 1 small, cut into 2.5 cm chunks (for skewering)
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a large bowl, combine olive oil, yogurt, minced garlic, ground cumin, paprika, black pepper, salt, and lemon juice to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Preheat your grill or BBQ to medium-high heat.
- While the grill is heating, thread the marinated lamb, bell pepper, and red onion alternately onto the skewers.
- Once the grill is ready, place the skewers on it and grill for about 12-15 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness.
- Remove from the grill and let rest for 5 minutes. Sprinkle with fresh chopped parsley before serving.
