  • Yogurt - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Bell pepper - 1 medium, cut into 2.5 cm cubes (for skewering)
  • Red onion - 1 small, cut into 2.5 cm chunks (for skewering)
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a large bowl, combine olive oil, yogurt, minced garlic, ground cumin, paprika, black pepper, salt, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat your grill or BBQ to medium-high heat.
  4. While the grill is heating, thread the marinated lamb, bell pepper, and red onion alternately onto the skewers.
  5. Once the grill is ready, place the skewers on it and grill for about 12-15 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness.
  6. Remove from the grill and let rest for 5 minutes. Sprinkle with fresh chopped parsley before serving.
