Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Greek yogurt - 100 grams
  • Cucumber - 50 grams, finely chopped
  • Mint leaves - 1 tablespoon, chopped

Steps

  1. In a bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
  3. Soak wooden skewers in water for 30 minutes if using, to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated lamb onto the skewers, leaving a little space between each piece.
  6. Grill the kebabs for about 10-15 minutes, turning occasionally until the meat is cooked to your desired doneness.
  7. While the kebabs are grilling, prepare the yogurt sauce by mixing Greek yogurt, chopped cucumber, parsley, and mint in a small bowl. Season with salt to taste.
