- Lamb shoulder - 400 grams, cut into 2.5 cm cubes

- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Greek yogurt - 100 grams
- Cucumber - 50 grams, finely chopped
- Mint leaves - 1 tablespoon, chopped
Steps
- In a bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
- Soak wooden skewers in water for 30 minutes if using, to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb onto the skewers, leaving a little space between each piece.
- Grill the kebabs for about 10-15 minutes, turning occasionally until the meat is cooked to your desired doneness.
- While the kebabs are grilling, prepare the yogurt sauce by mixing Greek yogurt, chopped cucumber, parsley, and mint in a small bowl. Season with salt to taste.
