Ingredients

  • Lamb head - 1 medium (about 1.5 kg)
  • Olive oil - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 tablespoons, chopped
  • Paprika - 1 tablespoon
  • Cumin - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Water - 1 liter

Steps

  1. Clean the lamb head thoroughly under running water, removing any impurities.
  2. In a bowl, combine olive oil, minced garlic, chopped rosemary, paprika, cumin, black pepper, salt, and lemon juice to create a marinade.
  3. Rub the marinade all over the lamb head, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 2 hours or overnight for best results.
  4. Preheat the grill to medium-high heat.
  5. Place the marinated lamb head on the grill and cook for about 1.5 to 2 hours, turning occasionally until the meat is tender and has a nice char.
  6. During grilling, baste the lamb head with any remaining marinade to enhance flavor and moisture.
  7. Once cooked, remove from the grill and let it rest for 10-15 minutes before serving.
  8. Serve with fresh lemon wedges and enjoy with a side of fresh salad or grilled vegetables.
