Ingredients
- Ground lamb - 400 grams
- Onion - 1 small, finely grated
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon (for grilling)
- Zucchini - 1 medium, sliced into rounds (for grilling)
- Bell pepper - 1 medium, cut into chunks (for grilling)
Steps
- In a large bowl, combine the ground lamb, grated onion, minced garlic, chopped parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Form the mixture into small meatballs, about the size of a golf ball, and place them on a plate.
- Preheat your grill or BBQ over medium-high heat, and brush the grill grates with olive oil to prevent sticking.
- Once the grill is hot, add the meatballs to the grill and cook for about 5-6 minutes on each side, or until they are browned and cooked through.
- While the meatballs are cooking, toss the sliced zucchini and bell pepper with a drizzle of olive oil, salt, and pepper. Grill the vegetables alongside the meatballs for about 4-5 minutes, turning occasionally until they are tender and slightly charred.
- Remove the meatballs and grilled vegetables from the grill, and serve hot with a side of fresh salad or cauliflower rice if desired.
