Ingredients

  • Lamb shoulder, boneless - 400 grams
  • Olive oil - 2 tablespoons
  • Greek yogurt - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Oregano, dried - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Red onion, cut into wedges - 1 medium
  • Bell pepper, cut into chunks - 1 medium
  • Cherry tomatoes - 100 grams

Steps

  1. Cut the lamb shoulder into 2-3 cm cubes and place them in a bowl.
  2. In a separate bowl, mix olive oil, Greek yogurt, minced garlic, paprika, cumin, oregano, salt, black pepper, and lemon juice to create a marinade.
  3. Pour the marinade over the lamb cubes, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. Preheat the grill to medium-high heat.
  5. Soak wooden skewers in water for 10 minutes (if using), then thread the marinated lamb cubes onto the skewers, alternating with red onion wedges, bell pepper chunks, and cherry tomatoes.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the lamb is browned and cooked to your desired doneness.
  7. Remove from the grill and let rest for a few minutes before serving.
