Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Red onion - 1 small, sliced
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cut the lamb shoulder into thin slices and place them in a mixing bowl.
  2. In a separate bowl, combine olive oil, minced garlic, paprika, cumin, oregano, salt, black pepper, and lemon juice to create a marinade.
  3. Pour the marinade over the lamb slices, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
  4. Preheat a grill or barbecue to medium-high heat.
  5. Thread the marinated lamb slices onto skewers, making sure to leave some space between each piece for even cooking.
  6. Grill the skewers for about 10-15 minutes, turning occasionally, until the lamb is cooked through and has nice grill marks.
  7. While the lamb is grilling, prepare a fresh salad by combining sliced red onion, diced tomato, diced cucumber, and chopped parsley in a bowl. Drizzle with olive oil and a pinch of salt.
  8. Once cooked, remove the lamb from the grill and let it rest for a few minutes before serving.
  9. Serve the grilled lamb skewers alongside the fresh salad for a wholesome meal.
