Ingredients

  • Lamb shoulder - 300 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 15 grams, finely chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Cherry tomatoes - 100 grams
  • Lettuce leaves - for serving

Steps

  1. In a bowl, combine minced garlic, chopped parsley, chopped mint, cumin, paprika, salt, black pepper, olive oil, and lemon juice to create a marinade.
  2. Cut the lamb shoulder into thin strips and add to the marinade, ensuring the meat is well-coated. Cover and marinate for at least 30 minutes in the refrigerator.
  3. Preheat the grill to medium-high heat. While the grill is heating, prepare the vegetables by tossing zucchini, bell pepper, and cherry tomatoes with a drizzle of olive oil, salt, and pepper.
  4. Once the grill is ready, thread the marinated lamb strips onto skewers.
  5. Place the lamb skewers on the grill and cook for about 3-4 minutes on each side, or until the lamb is cooked to your desired doneness.
  6. While the lamb is grilling, place the vegetable skewers on the grill and cook for about 5-7 minutes, turning occasionally until they are tender and slightly charred.
  7. Remove the skewers from the grill and let the lamb rest for a couple of minutes.
  8. Serve the grilled lamb on a bed of lettuce leaves alongside the grilled vegetables.
