- Lamb shoulder - 400 grams, cut into 2.5 cm cubes

- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh rosemary - 1 teaspoon, chopped
- Fresh thyme - 1 teaspoon, chopped
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bell pepper - 1 medium, cut into 2.5 cm pieces
- Red onion - 1 medium, cut into wedges
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, paprika, salt, and black pepper to create a marinade.
- Add the lamb cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 15 minutes to allow flavors to develop.
- Preheat the grill or barbecue to medium-high heat.
- Thread the marinated lamb, bell pepper pieces, and onion wedges onto the skewers, alternating between the lamb and vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness and has nice grill marks.
