  • Fresh thyme - 1 teaspoon, chopped
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell pepper - 1 medium, cut into 2.5 cm pieces
  • Red onion - 1 medium, cut into wedges
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, paprika, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 15 minutes to allow flavors to develop.
  3. Preheat the grill or barbecue to medium-high heat.
  4. Thread the marinated lamb, bell pepper pieces, and onion wedges onto the skewers, alternating between the lamb and vegetables.
