Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Red onion - 1 small, sliced
  • Bell pepper - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Parsley - 1/4 cup, chopped

Steps

  1. Cut the lamb shoulder into 2.5 cm cubes and place them in a mixing bowl.
  2. In a separate bowl, whisk together olive oil, minced garlic, paprika, cumin, oregano, salt, black pepper, and lemon juice to create the marinade.
  3. Pour the marinade over the lamb cubes, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
  4. Preheat the grill or BBQ to medium-high heat.
  5. Thread the marinated lamb cubes onto skewers, alternating with slices of red onion and bell pepper.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked through and has nice grill marks.
  7. While the lamb is grilling, prepare a fresh salad by combining cherry tomatoes, diced cucumber, and chopped parsley in a bowl. Drizzle with olive oil and season with salt and pepper to taste.
  8. Once the lamb is cooked, remove from the grill and let rest for a few minutes before serving.
  9. Serve the grilled lamb skewers with the fresh vegetable salad on the side.
