- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Red onion - 1 small, sliced
- Bell pepper - 1 medium, sliced
- Cherry tomatoes - 200 grams, halved
- Cucumber - 1 medium, diced
- Parsley - 1/4 cup, chopped
Steps
- Cut the lamb shoulder into 2.5 cm cubes and place them in a mixing bowl.
- In a separate bowl, whisk together olive oil, minced garlic, paprika, cumin, oregano, salt, black pepper, and lemon juice to create the marinade.
- Pour the marinade over the lamb cubes, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
- Preheat the grill or BBQ to medium-high heat.
- Thread the marinated lamb cubes onto skewers, alternating with slices of red onion and bell pepper.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked through and has nice grill marks.
- While the lamb is grilling, prepare a fresh salad by combining cherry tomatoes, diced cucumber, and chopped parsley in a bowl. Drizzle with olive oil and season with salt and pepper to taste.
- Once the lamb is cooked, remove from the grill and let rest for a few minutes before serving.
- Serve the grilled lamb skewers with the fresh vegetable salad on the side.
