Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cauliflower - 300 grams, chopped
  • Butter - 2 tablespoons
  • Heavy cream - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - for garnish

Steps

  1. In a bowl, combine the cubed lamb shoulder, olive oil, minced garlic, paprika, cumin, salt, and black pepper. Mix well and marinate for at least 30 minutes.
  2. While the lamb is marinating, steam the chopped cauliflower until tender, about 10-15 minutes.
  3. Once the cauliflower is cooked, drain any excess water and transfer it to a blender. Add butter, heavy cream, and grated Parmesan cheese. Blend until smooth and creamy. Set aside.
  4. Preheat the grill or BBQ to medium-high heat. Thread the marinated lamb onto skewers.
  5. Grill the lamb skewers for about 10-12 minutes, turning occasionally, until they are cooked to your desired doneness.
  6. Serve the grilled lamb skewers over a generous portion of cauliflower mash and garnish with fresh parsley.
