- Lamb shoulder - 300 grams, cubed
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red chili flakes - 1/2 teaspoon
- Baking potatoes - 2 medium
- Yogurt - 100 grams
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, cut into wedges
Steps
- Preheat the grill to medium-high heat.
- In a bowl, combine lamb cubes, olive oil, minced garlic, paprika, cumin, salt, black pepper, and red chili flakes. Mix well and marinate for at least 30 minutes.
- While the lamb is marinating, wash the baking potatoes and pierce them several times with a fork. Bake in the preheated oven for about 40 minutes or until tender.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise and scoop out a bit of the flesh to create space for the filling.
- Thread the marinated lamb onto skewers and grill for about 10-12 minutes, turning occasionally, until cooked through and nicely charred.
- In a small bowl, mix the yogurt with chopped parsley and a pinch of salt.
- To serve, place the grilled lamb skewers over the baked potato halves and top with the yogurt mixture. Serve with lemon wedges on the side.
