- Lamb shoulder - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red onion - 1, chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking potatoes - 2 large
- Greek yogurt - 100 grams
- Fresh parsley - 2 tablespoons, chopped
- Sour cream - 50 grams
- Pickled cucumbers - 50 grams, chopped
Steps
- Preheat your oven to 200°C (390°F).
- Rub the lamb shoulder with olive oil, minced garlic, paprika, cumin, salt, and black pepper. Let it marinate for at least 30 minutes.
- Place the marinated lamb in a roasting pan, cover it with foil, and bake for 90 minutes.
- While the lamb is cooking, wash and prick the baking potatoes with a fork. Place them on a baking tray and bake in the oven for about 60 minutes or until tender.
- After 90 minutes, remove the foil from the lamb and cook for an additional 15 minutes to allow it to brown.
- Once the lamb and potatoes are done, take them out of the oven. Let the lamb rest for 10 minutes before slicing.
- Slice the baked potatoes open, fluff the insides with a fork, and top them with Greek yogurt, sour cream, chopped parsley, and pickled cucumbers.
- Serve the sliced lamb shoulder on the side of the stuffed baked potatoes.
