Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red onion - 1, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baking potatoes - 2 large
  • Greek yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Sour cream - 50 grams
  • Pickled cucumbers - 50 grams, chopped

Steps

  1. Preheat your oven to 200°C (390°F).
  2. Rub the lamb shoulder with olive oil, minced garlic, paprika, cumin, salt, and black pepper. Let it marinate for at least 30 minutes.
  3. Place the marinated lamb in a roasting pan, cover it with foil, and bake for 90 minutes.
  4. While the lamb is cooking, wash and prick the baking potatoes with a fork. Place them on a baking tray and bake in the oven for about 60 minutes or until tender.
  5. After 90 minutes, remove the foil from the lamb and cook for an additional 15 minutes to allow it to brown.
  6. Once the lamb and potatoes are done, take them out of the oven. Let the lamb rest for 10 minutes before slicing.
  7. Slice the baked potatoes open, fluff the insides with a fork, and top them with Greek yogurt, sour cream, chopped parsley, and pickled cucumbers.
  8. Serve the sliced lamb shoulder on the side of the stuffed baked potatoes.
